To complete the gravy, add 1 to 2 cups whipping cream according to taste; for thickening add cornstarch or a package of brown gravy mix (if you prefer stronger seasoning taste). Season to taste by increasing the appropriate amount of the marinade ingredients.

1 tablespoon butter

1¼ pounds lean pork scallops

½ cup dry white wine, divided

½ cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

Salt and pepper to taste
